Chocolate Chip Cookie Dough Frosted Brownies

Brownies or chocolate chip cookies?  Or both?  Who doesn’t love brownies?  They’re even better with chocolate chip cookie dough frosting.  They are easy to make and very chocolatey.  The directions below show you how to make them with a mixer but I do it all by hand.

4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
8 ounces melted butter
11/4 cups cocoa, sifted
2 teaspoons vanilla extract
1/2 cup flour, sifted
1/2 teaspoon kosher salt

Preheat the oven to 300 degrees F. Spray an 8 inch square pan with cooking spray and lined with parchment paper.

In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy. Add both sugars. Add remaining ingredients, and mix to combine.

Pour the batter into 8-inch square pan and bake for 45 minutes.

Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it’s done, cool completely.

Chocolate Chip Cookie Dough

1 stick butter, softened to room temperature
3/4 cup granulated sugar
4/5 cup brown sugar
1/4 cup milk
1 tsp vanilla extract
1 cup all purpose flour
1/2 cup mini chocolate chips

Cream together butter and both sugars.  Gradually add in milk and vanilla extract and mix well.   Add in flour and mix just until incorporated.  The dough should be spreadable.  If it’s too stiff add a little more milk until it’s the right consistency.  By hand, stir in chocolate chips.

With a spatula, spread the dough evenly  on top of the brownies.   Refrigerate until the brownies have set and then cut as desired.
